There may still be an existing debate about whether or not Oreo is considered vegan. But you won’t have to worry about that in this recipe. This cake is purely vegan and purely yum!

Triple Layer Oreo Cake

This recipe doesn’t use any Oreos but you may garnish using crushed Oreos if you like, but it isn’t really necessary.

Ingredients:

Chocolate Cake

  • 2 cups buckwheat flour
  • 1 1/2 cupsĀ almond milk
  • 1 1/3 cups caster sugar
  • 1 cup cacao powder
  • 3 flax eggs (equivalent to 3 tablespoons of flax seeds stirred with 9 tablespoons of water and set in the fridge for 15 minutes)
  • 2/3 cup coconut oil (melted)
  • 2 teaspoon apple cider vinegar
  • 1 1/2 teaspoon pure vanilla extract
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder

Vanilla Buttercream Frosting

  • 3/4 cup vegan butter
  • 2 teaspoons pure vanilla extract
  • 1 1/4 cup pure cane icing sugar

Instructions:

Chocolate Cake

  1. Preheat oven to 180 degrees Celsius and lightly grease 3 round small cake pans. Set aside.
  2. In a large bowl, mix the almond milk and vinegar. Let set for a few minutes before adding the coconut oil and vanilla extract. Beat until it turns somewhat foamy.
  3. Sieve in the flour, sugar, cacao powder, baking soda, and baking powder, onto the wet ingredients while beating. Add the flax eggs. Beat until it is creamy .
  4. Divide and pour batter evenly onto your cake pans. Tap the pan gently to get rid of air bubbles.
  5. Bake 25 to 30 minutes, or until a toothpick inserted into the middle comes out clean. Let cool before putting the frosting.

Vanilla Buttercream Frosting

  1. Whip up the icing sugar, vegan butter and vanilla extract all together until it reaches your desired consistency.
  2. Using a spatula, spread on top of each cake layer. Put the cakes on top of each other and continue spreading the frosting on the sides until the entire cake is fully covered with frosting.
  3. Store the cake in the refrigerator and sit in room temperature for about 20-30 minutes before serving.
